ingredients

  • 5 ounces homemade or store-bought focaccia bread
  • 2 tablespoons Wesson Plant Based Butter
  • 1 teaspoon flaky sea salt
  • 1 cup arugula
  • 2 tablespoons fresh lemon juice
  • 1/2 ripened pear, cored and sliced into ⅛ inch pieces
  • 1/2 pound sliced prosciutto di Parma
  • 8 ounces burrata cheese
  • Freshly ground black pepper, to taste

Method

  • Step 1

    Heat cast-iron pan to medium-high heat. Slice focaccia bread in half and toast, cut-side down, until golden brown to use as sandwich bread.

  • Step 2

    Smear Wesson Plant Based Butter spread on both halves of the sliced focaccia. Top with flaky salt. Add fresh arugula to the bottom half of the focaccia sandwich bread and squeeze fresh lemon juice on top. Layer sliced pear onto top half of focaccia sandwich bread.

  • Step 3

    Layer prosciutto di Parma on top of arugula, in ribbons. Add burrata and sprinkle with freshly ground black pepper.
