Crispy Air-Fried Hashbrowns

These hashbrowns are extra crispy because they are cooked in the air fryer. With just 5 ingredients, this breakfast side dish could be yours.

ingredients
- 1 lb Russet potato
- 2 tablespoons oil
- 1/2 heaping teaspoon salt
- Freshly cracked black pepper
- 2 teaspoons arrowroot starch
Method
Step 1
Grate potatoes using a box grater.
Step 2
Soak in cold water for about 25 minutes. Strain and press out excess water, blot dry with paper towel.
Step 3
Heat oil in a pan a little below medium. Cook potatoes, stirring frequently to avoid browning for about 15-20 minutes until potatoes are soft. If you notice them browning easily, reduce the heat slightly. Transfer to a plate or bowl, let cool, then add starch, onion powder, salt and pepper and mix gently with hands until incorporated.
Step 4
Form into about 3 patties on a parchment paper lined baking sheet and freeze for about an hour. Lightly spray bottom of air fryer with oil, place frozen patties, then lightly spray oil on top.
Step 5
Air fry at 400F for 17-20 minutes, flipping halfway (keep an eye on them, air fryer temps can vary). Sprinkle with salt while hot. I like to dip mine in BBQ sauce, enjoy!
