Creamy coconut chocolate nice cream is the perfect vegan treat!

Coco Choc Nice Cream

 

Ingredients

1 cup soaked organic cashews

1 can of coconut cream

2/3 cup raw cacao powder 

10 Medjool Dates 

1 tsp pure vanilla powder 

Pinch of Murray River Salt (or regular sea salt )

1/4 teaspoon guar gum (a plant based thickener derived from guar beans that prevents icicles from forming!)

 

Method

Soak cashews in water for at least 4 hours then blend all ingredients together until smooth and freeze in bread pan and cover with baking paper and elastic band to cover. To serve remove from freezer and allow to soften slightly before serving.
