ingredients
- 3 tablespoons extra-virgin olive oil, divided
- 2 onions, peeled and sliced into rounds
- kosher salt, to taste
- black pepper, to taste
- 2 flatbread rounds
- 1 7-ounce package Finlandia Swiss Cheese, 10 slices
- 2 tablespoons honey or honeycomb
- 1 tablespoon fresh thyme, minced
- 1 tablespoon chives, minced
Method
Step 1
Heat a grill to medium-high heat. Brush onion with 1 tablespoon olive oil. Season lightly with salt and pepper.
Step 2
Grill onions until softened and browned on both sides, flipping once. Remove onto a plate, separate rings if necessary.
Step 3
Brush flatbread on both sides with 1 tablespoon olive oil, sprinkle with salt and pepper. Grill flatbread for 1-2 minutes on one side.
Step 4
Remove flatbread from grill. Top the grilled side with Finlandia Swiss Cheese, onions, honey, and thyme. Season lightly with salt and pepper.
Step 5
Turn off one side of the grill and leave the other side on med/high. Place flatbreads on cool side of the grill, cover and grill until flatbread is golden brown, toasted around the edges and cheese is melty, about 3-4 minutes.
Step 6
Drizzle with remaining 1 tablespoon olive oil, sprinkle with chives and a pinch of salt. Slice and serve. Enjoy!
