"It's a gloomy rainy day for us here in NY but with it comes a ton of blessings; our family welcomed a healthy baby boy during these crazy times. #AuntyAgain9x ✨ . I spent yesterday prepping for my long work week ahead. To be honest work has been kicking my butt and I'm still trying to find my groove. Nonetheless grateful for the blessing to be able to work. . How are you doing? Photo: Banging braised chicken with mushrooms and carrots that went down in yesterday's mealprep 😁 season chicken w/ your fave spices then brown and remove to the side. Remove excess oil and leave about 1tbsp in the pan. Saute onions, mushrooms, carrots. Add in some chicken stock, 1 tbsp Dijon mustard and simmer. Then return the chicken thighs to the pot and transfer the pot into the oven at 350F for about 30mins. I then thicken the sauce a little with an arrowroot powder slurry. Sprinkle with chopped parsley and enjoy. Serve w/ rice/cauliflower rice or potatoes and sauteed spinach."
