For the pork belly

ingredients

  • 1 pound boneless pork belly
  • 2 tablespoons Lee Kum Kee Chili Sauce
  • 3 tablespoons soy sauce
  • 3 tablespoons oyster sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon brown sugar
  • 1 onion, roughly chopped
  • 2 tablespoons freshly grated ginger
  • 2 green onions, roughly chopped
  • Kosher salt, to taste

For the ramen

ingredients

  • 4 packs ramen noodles
  • Pork belly marinade (above)
  • 6 cups chicken stock
  • 1 tablespoon Lee Kum Kee Chili Sauce
  • 1 tablespoon gochujang
  • 2 tablespoons miso paste
  • Green onions, chopped for garnish
  • Soft boiled eggs, sliced for topping
  • Sesame seeds, for garnish

To make the pork belly

Method

  • Step 1

    Preheat the oven to 275°F.

  • Step 2

    Cut the fat of the pork belly in squares.

  • Step 3

    Mix Lee Kum Kee Chili Sauce, soy sauce, oyster sauce, sesame oil, and brown sugar in a bowl to create the marinade.

  • Step 4

    Coat the pork belly in a baking dish with the marinade.

  • Step 5

    Add chopped onion, ginger, and green onions around the pork belly. Sprinkle with a pinch of salt.

  • Step 6

    Over medium-high, seared pork belly on every side.

  • Step 7

    Place in a baking dish and cook in the oven for 40 minutes.

  • Step 8

    Once done, slice the pork belly into thin strips.

To make the ramen

  • Step 1

    Cook ramen noodles according to package instructions. Drain and set aside.

  • Step 2

    Combine chicken broth, Lee Kum Kee Chili Sauce, gochujang, miso paste, and the leftover marinade in a pot. Bring it to a simmer.

  • Step 3

    Divide the cooked ramen noodles between two bowls and ladle the hot broth with pork belly.

  • Step 4

    Garnish with chopped green onions, soft-boiled egg slices, and sesame seeds before serving.
