"Sometimes a single ingredient is the starting place for some of my most complicated recipes. I discovered these delicately (freshly) dried green figs from my friends at @natoora @franconatoora at the end of last year. Their flavour is perfectly concentrated and they are not partially reconstituted with water like many dried fruits now. Natural sugar crystals form on the outside of the skin like glitter and the insides burst with popping seeds. I'd been wanting to recreate the Lady Baltimore cake from the US South for a long time and this was just what it took. My recipe is in @guardian_cook today so I hope you will give it a try!
