Recipe

  • 2 teaspoons olive oil
  • 1 cup mushrooms, sliced
  • 1-2 cloves garlic, sliced
  • 1 tablespoon soy sauce
  • 1 cup spinach
  • 1/ 2 avocado
  • Lemon juice, to taste
  • Salt, to taste
  • Black pepper, to taste
  • 2-3 slices bread, of choice, toasted

Method

  • Step 1

    In a skillet, heat olive oil and sauté the garlic and mushrooms for 8-10 minutes.

  • Step 2

    Once the mushrooms have released their water, add soy sauce and spinach, and cook until spinach is wilted.

  • Step 3

    Mash your avocado and season with lemon juice, salt, and pepper to taste.

  • Step 4

    To serve, top toasted bread with avocado and mushroom/spinach mixture.
