Celebrating the sunshine and longer days (ok there's still some snow on the ground but I'm trying to ignore that) with this mega kale, fennel + red cabbage salad with quick-pickled shallots, fermented beets, and broiled wild sockeye salmon with a miso-ginger-lime glaze. Cold, gray winter days call for turmeric + ginger-loaded Rainbow Veggie Fried Rice. Short-grain brown rice stir-fried in coconut oil with scallions, carrot, ginger, garlic, celery + fennel. I stir in an egg towards the end and season the mixture with coconut aminos + lime, then all the garnishes join the party: pickled ginger, spicy kimchi, avo, radish, scallions, cilantro + gomasio.
