Korean potato salad is a classic side dish "ban chan" in many homes and at Korean BBQ restaurants. Often it is made with mashed potatoes with bits of fruits and carrots. There are variations like mashed sweet potato or pumpkin.

ingredients

  • 1 pound peeled and cut into equal-sized pieces peeled and cut into equal-sized pieces
  • 2 tablespoon salt, plus a bit more for seasoning
  • 1/2 cup uncooked (or 1 cup cooked) elbow macaroni (optional)
  • 1/2 cup seeds removed and diced Kirby cucumber
  • 1/2 cup minced carrot
  • 1/2 cup cooked sweet corn
  • 3-4 hard-boiled eggs, peeled
  • 1/2 cup kewpie mayonnaise (or regular; see Notes)
  • 2 tablespoon sugar
  • 1/4 teaspoon white ground pepper
  • 1/2 teaspoon lemon juice (optional; see Notes)
