This carrot cake recipe is inspired by memories of baking with my mother. Baking has always been a symbol of the joy cooking brings to folks when you take the time to share food and space with them. This month Yardy is celebrating Pride by doing a series of talks with black/queer creatives who often rely on Pride month to generate wealth for themselves. We are asking viewers to donate to their favorite charity or directly to the artist.

ingredients
- 4 large eggs, room temperature
- 2 cups granulated sugar
- 3/4 cup brown butter, room temperature
- 1/4 cup olive oil
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 1 tablespoon ground cinnamon
- 2 teaspoons baking soda
- 1 teaspoon kosher salt
- Heaping pinch of nutmeg
- 4 cups loosely packed grated carrots
- Cream cheese frosting,
- Candied oranges, optional garnish
Method
Step 1
Preheat oven to 350°F with the rack adjusted to the center position. Line a half sheet pan with payment paper.
Step 2
In a large mixing bowl, whisk the eggs until pale and frothy. Add the sugar, brown butter, olive oil, and vanilla and whisk until smooth.
Step 3
In a separate mixing bowl, whisk together the flour, cinnamon, baking soda, salt, and nutmeg. Fold into the egg mixture until just combined, followed by the grated carrots.
Step 4
Pour batter into the prepared sheet pan and bake for 15 to 20 minutes, until a cake tester comes out clean.
Step 5
Allow to cool, garnish if desired and enjoy!
