Fresh Tomato Pappardelle

"I have a wide, cool countertop now, so when I come home I drop my bag and umbrella at the door, and spread out and make everything from scratch. I'll always pick a jazz playlist and I'll throw the windows open to let the music mix with rain. This recipe is from @nytfood and it's incredibly simple but also incredibly elegant. If Audrey Hepburn's little black dress in Breakfast at Tiffany's were a deep plate of pasta, surely it would be this one. I squeezed and grated fresh tomatoes until I had a bowl full of pulp, which I simmered for 15 minutes with salt, pepper, garlic, basil. Then I stirred it into al dente pappardelle, over which I dolloped ricotta and tore basil. Shaves of pecorino and crushed chili flakes to finish. Rainy summer evening comfort food at its very, very best."
