ingredients
- 2 1/2 cups oatmeal, ground in food processor
- 2 cups all-purpose flour
- 1 teaspoon salt, salt
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1 cup butter, room temperature
- 1 cup granulated sugar
- 1 cup dark brown sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 1/2 cups milk chocolate chips
- 1 cup chopped nuts
- 3/4 cup raisins
- 1 cup sweetened, flaked coconut
Method
Step 1
Preheat the oven to 375. Lay a cookie rack on top of a baking sheet. Place a baking mat on the rack or use parchment paper.
Step 2
Process the oatmeal in a food processor with a few pulses to make a coarse powder. In a bowl add the oatmeal, flour, salt baking powder, and baking soda and stir to combine. In the bowl of a mixer, add the butter, granulated, and brown sugar and beat to combine until the sugar is light and fluffy. Beat in the eggs and the vanilla.
Step 3
With the mixer of low speed, gradually add the flour mixture and beat to make a thick cookie dough. Add the chocolate chips, nuts, raisins, and coconut and blend into the cookie dough.
Step 4
Make 1 ½" balls of dough and place them 2" apart on the baking mat. Bake the cookies for 10-11 minutes until just golden. Use a spatula to flatten the cookies down after 5 minutes of baking time. Let the cookies cool on a baking rack until just warm and serve.
