ingredients

  • 2 1/2 cups ground oatmeal
  • 2 cups all-purpose flour
  • 1 teaspoo salt
  • 1 teaspoo baking powder
  • 1 teaspoo baking soda
  • 1 cup softened butter
  • 1 cup granulated sugar
  • 1 cup dark brown sugar
  • 2 large eggs
  • 1 teaspoo vanilla extract
  • 1 1/2 cups chocolate chips
  • 1 cup chopped nuts
  • 3/4 cup raisins
  • 1 cup sweetened flaked coconut

Method

  • Step 1

    Preheat the oven to 375. Lay a cookie rack on top of a baking sheet. Place a baking mat on the rack or use parchment paper.

  • Step 2

    Process the oatmeal in a food processor with a few pulses to make a coarse powder. In a bowl add the oatmeal, flour, salt baking powder and baking soda and stir to combine.

  • Step 3

    In the bowl of a mixer, add the butter, granulated and brown sugar and beat to combine until the sugar is light and fluffy. Beat in the eggs and the vanilla. With the mixer of low speed, gradually add the flour mixture and beat to make a thick cookie dough. Add the chocolate chips, nuts, raisins and coconut and blend into the cookie dough.

  • Step 4

    Make 1 ½" balls of dough and place them 2" apart on the baking mat. Bake the cookies for 10-11 minutes until just golden. Use a spatula to flatten the cookies down after 5 minutes of baking time.

  • Step 5

    Let the cookies cool on a baking rack until just warm and serve.
