ingredients

  • 1/2 butter, softened
  • 1/2 cup peanut butter, softened
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 large egg
  • 1/2 teaspoon vanilla extract
  • 1 1/4 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 3/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup chopped dry-roasted salted peanuts

Method

  • Step 1

    Heat the oven to 375. Line a baking sheet with a non-stick mat or parchment paper.

  • Step 2

    Add the butter and peanut butter to the mixer and beat on low speed. With the mixer running, add the granulated sugar, brown sugar, egg and vanilla and mix until combined.

  • Step 3

    In another bowl add the flour, baking powder, baking soda and salt and stir to combine. With the mixer running add the dry ingredients.

  • Step 4

    Form a ball of cookie dough the size of a large walnut and place on the baking sheet. Flatten the dough ball with your palm. Use a fork to make a criss-cross pattern on top of the cookie, then sprinkle with some of the dry-roasted peanuts.

  • Step 5

    Bake the cookies just until the edges start to turn brown, about 11-12 minutes. Cool the cookies on a rack.
