For the french toast

ingredients

  • 1/2 cup unsweetened soy or almond milk
  • 1 tablespoon all-purpose flour (can substitute gluten free flour)
  • 1/2 tablespoon nutritional yeast
  • 1/4 teaspoon ground cinnamon
  • 2 teaspoons pure maple syrup, plus more for serving
  • 1/2 teaspoon vanilla extract
  • Pinch of salt
  • 8 slices white sandwich bread (can substitute gluten free bread), crusts removed
  • 1 tablespoon vegan butter
  • Icing sugar, to top
  • Melted vegan chocolate, for serving

Method

  • Step 1

    In a shallow dish, whisk together the milk, flour, nutritional yeast, cinnamon, maple syrup, vanilla extract and salt.

  • Step 2

    Using a rolling pin, roll each bread slice to flatten slightly. Top each slice with filling of choice along the bottom of the slice of bread, then tightly roll up.

  • Step 3

    In a large pan over medium heat, melt the vegan butter. Dip each roll in the milk mixture, being sure to cover each side completely. Drip off any excess, then place in the pan, seam-side down. Cook until golden brown all over (about 5 minutes).

  • Step 4

    To serve, stack the roll ups on each plate into a pile, then top with fresh fruit. Dust with icing sugar then drizzle with melted vegan chocolate or maple syrup.
