Vegetarian, Lunch
Sweet potato hummus
1 can of chickpeas, rinse well
1 small roasted sweet potato
juice of 1/2 lemon
1/2 tsp cumin seeds
1 tsp tahini
some water
salt and honey to taste
simply blend all ingredients and add water until you have reached your desired consistency. Add salt and honey to taste.
fermented red cabbage with apple and ginger
1 head of red cabbage
2 medium sized apples
1 thumb size piece of ginger
1 tbsp of coarse sea salt
chop or grate the red cabbage until thinly sliced. Add salt and massage for about 15-30 minutes or until you have enough liquid to cover all of the cabbage once it's transferred to a big air-tight jar. Add the grated apple and ginger last; mix well with the cabbage and keep the jar at room temperature for anything between 2-5 weeks.
Open faced sandwiches a couple slices of your favorite bread (I love a good sourdough or a rustic rye bread)

Simply assemble your first open faced sandwich by spreading some hummus on a slice of bread, top it with your cabbage and add some more chickpeas and butter beans. finish off with a sprinkle of chili and basil leaves.
The second open faced sandwich is just a spread of your favorite nut butter and a banana, simply caramelized in a hot pan until browned on both sides.
