Brownie Cake With Espresso And Cashew Cream Frosting

Recipe Intro From thesunshineeatery
Dessert, Valentine's Day
150g oat flour
150g buckwheat flour
150g coconut sugar
50g raw cacao
1 cup of strong coffee
2 small ripe bananas, mashed
1 tsp baking powder
pinch of vanilla, cinnamon and salt
Combine all ingredients and bake at 180 degrees Celsius until the top starts to crack and a toothpick comes out almost clean (but still moist so it's stays nice and fudgy)
CASHEW CREAM:
1/4 cup of cashews, soaked in warm water for 20 min
2 tbsp maple syrup
enough rice milk to blend into a thick, spreadable cream
Blend Cashew cream ingredients until smooth and spread all over cooled cake.
Top with fresh berries, pomegranate and/or nuts hazelnuts work really well!
