ingredients

  • 60 grams plant-based butter
  • 45 grams powdered sugar
  • 120 all-purpose flour
  • 1/2 teaspoon vanilla
  • 2 tablespoons plant-based milk
  • 1 teaspoon blue match powder dissolved in 3 tsp water

Method

  • Step 1

    In a food processor, cream the butter and sugar and then add flour, vanilla and milk. Mix until a dough forms.

  • Step 2

    Divide the dough into 2 equal portions. To one portion, add the dissolved matcha powder.

  • Step 3

    Roll our both doughs separately into thin rectangular shape. Place the matcha dough on top of the white dough. Roll up the dough starting from the long side of the rectangle. Roll it tightly and wrap in clingfilm, refrigerate for 1 hour.

  • Step 4

    Slice the cookies and place in refrigerator again for 20 mins before baking.

  • Step 5

    Bake in a preheated oven for 10-12 mins at 180°C/ 350°F. Allow to cool completely before indulging.
