Baked Churros:
ingredients
- 1 1/3 cups all purpose flour
- 1 1/3 cups water
- 1 teaspoon vanilla extract
- 1/2 teaspoon salt
- 1/4 cup unsalted butter
- 2 tablespoons light brown sugar, or dark
- 1 tablespoon honey
- 1/2 tablespoon cinnamon
- 3 large eggs
- 1 tablespoon butter, melted, for brushing
For S'mores
ingredients
- Ghirardelli Chocolate SQUARES
- marshmallows
Method
Step 1
Preheat oven to 375F. In a saucepan on medium-high heat, bring the water, vanilla extract, salt, unsalted butter, brown sugar, honey, and cinnamon to a boil.
Step 2
As soon as the mixture starts to boil, remove from heat and mix in the flour.
Step 3
Crack and whisk eggs in a separate bowl. Add whisked eggs in 1/3rd at a time to the batter. Mix until smooth. (It will look a little runny, but just keep mixing it will combine & be smooth).
Step 4
Line a baking sheet with a silicone baking mat (or wax paper). Place the lined baking sheet on top of another baking sheet. This will help the baked churros cook evenly without burning the bottom.
Step 5
Place a 1M or 2D piping tip into your piping bag. Add batter to the piping bag and pipe golf ball size circles. (You can pipe 4-6 inch lines if you don’t want to make them all into s’mores!) Pipe the remaining batter.
Step 6
Place churros into the oven for 28-32 minutes or until golden brown. I turn off the oven at minute 28 and let it sit in there for about 5-10 minutes or until they look a little crispy on the edges. (You can certainly fry the batter as well!)
Step 7
Remove from oven and coat a thin layer of melted butter and dip them in the cinnamon sugar mixture. Serve immediately if you are not making s’mores with them!
Step 8
For S’mores: Add chocolate square and marshmallow on top of a churro. Broil until marshmallow is toasted and add another churro on top! Serve immediately!
