Tropical Crepes

Tropical Crepes. What's your favorite way to start your Sunday Funday? Today I am taking it easy for the most part. I started the day off  by making these crepes to pack in that vitamin c, they were so tasty! Now getting ready to get in a little cardio workout and once I am done my husband and I are going out on the boat for some vitamin d. Hope everyone is having a great weekend!

Ingredients for Ricotta FIlling
•8oz ricotta, I used a dairy free
•2 tbsp honey
•zest of 1/2 orange
•1 cup of chopped pineapple

In a bowl add the honey and ricotta. With a mixer, mix until smooth. Fold in the pineapple.

*Crepes, make your favorite crepe mix and make according to the directions. I used a gluten free brand.

Ingredients for the Orange Sauce
•1 cup of @floridaorangejuice
•1/2 cup of sugar
•zest of 1/2 orange
•1 tsp cornstarch

In a bowl mix the cornstarch and orange juice. Then add to a stock pot along with the sugar and orange zest. Place over medium heat and cook for approx 5 minutes or until the sugar dissolves.

*Toppings, banana, kiwi, mango, passion fruit and coconut. (Pictured with banana, kiwi and mango)

To assemble the crepes add some of the ricotta filling to the crepe, add sliced bananas, roll the crepe and place on a plate. Drizzle with the orange sauce then top with your favorite tropical fruit. Enjoy!
