For the Meatballs

  • 1 pound ground beef (80/20)
  • 1 cup panko breadcrumbs
  • 1/4 cup green onion, finely chopped
  • 1 large egg
  • 1 teaspoon freshly grated ginger (or 1/4 tsp ground ginger)
  • 1 garlic clove, minced
  • 1 teaspoon sesame oil
  • 1/4 cup milk
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon black pepper
  • 1 1/2 teaspoons kosher salt

For the Teriyaki Sauce:

  • 1/4 cup mirin
  • 1/2 teaspoon garlic powder
  • 1/2 cup packed light brown sugar
  • 1/3 cup soy sauce
  • 1 tablespoon sesame oil
  • 1 1/2 tablespoons cornstarch
  • 1/2 teaspoon fresh ginger (or 1/8 tsp ground ginger)

Method

  • Step 1

    Preheat the oven to 375°F. Lightly spray a 9x13-inch baking dish with nonstick cooking spray.

  • Step 2

    In a large mixing bowl, combine all the meatball ingredients: ground beef, panko breadcrumbs, green onion, egg, ginger, minced garlic, sesame oil, milk, onion powder, black pepper, and kosher salt. Mix until just combined—avoid overmixing to keep the meatballs tender.

  • Step 3

    Using a 2-tablespoon ice cream scoop, portion out equal-sized meatballs and place them in the prepared baking dish.

  • Step 4

    Bake the meatballs in the preheated oven for 18-23 minutes, or until golden brown and cooked through, reaching an internal temperature of 160ºF as measured by a meat thermometer.

  • Step 5

    While the meatballs are baking, prepare the teriyaki sauce. In a medium saucepan, combine mirin, garlic powder, light brown sugar, soy sauce, sesame oil, cornstarch, minced garlic, and fresh ginger. Cook over medium-low heat for 8-10 minutes, stirring until the sauce thickens.

  • Step 6

    Once the meatballs are done baking, remove them from the oven and add them to the teriyaki sauce. Toss to coat evenly.

    Serve the teriyaki meatballs hot, paired with steamed rice and broccoli for a delicious meal. Enjoy!
