Baked Aubergine With Yoghurt, Tahini, And Pomegranate

"If I ever had my tiny restaurant serving comfort food this would be one of the first things on the menu. Baked aubergine mixed with yoghurt, tahini, garlic, lemon juice, fresh herbs and cooked einkorn berries. Sometimes I use freekeh or bulgur, sometimes green lentils. Normally I would put roasted pine nuts on the top but I got out of them so I used beaitiful pomegranate pearls "

1 baked aubergine, sliced in half



garlic, minced

lemon juice

fresh herbs 

cooked einkorn berries

pomegranate seeds



Top each slice of aubergine with the yoghurt, tahini, fresh garlic, lemon juice, and fresh herbs. Sprinkle the einkorn berries and pomegranate seeds on top.
