INGREDIENTS




Pak choi:
100g tofu, marinated in chili sauce
Splash of sesame oil
90g soba noodles
Bean sprouts
Sesame seeds
Cilantro



Cut the tofu in cubes and marinate in chili sauce of your choice with a splash of sesame oil.

Add the miso paste, stock cubes, shiitake, mushrooms, ginger, garlic to the water and bring to boil. Gently boil for about 5 minutes. Turn off the stove and add the tamari and soba noodles. Boil for 2 minutes. Add the Pak Choi and a splash of lemon juice. Leave for another minute and it’s ready.

Serve with some bean sprouts, tofu, sesame seeds and cilantro. Add fresh or dried chili if you like it spicier.

  • 2 vegetable stock cubes
  • 1 cup dried shiitake
  • 1 inch piece ginger
  • 1 sliced spring onion
  • 5 sliced mushrooms
  • 1 clove garlic, sliced
  • 1 teaspoon tamari
  • 1 teaspoon lemon juice
  • 2 pak choi, blanched in salted water and drained
  • 4 ounces tofu, marinated in chilli sauce
  • 1 teaspoon sesame oil
  • 1 (8 oz package) soba noodles
  • Bean sprouts, for garnish
  • Sesame seeds, for garnish
  • Cilantro, for garnish

Method

  • Step 1
