ingredients

  • 1 sheet of puff pastry, cut into 4 squares
  • 1 cup grated cheese
  • 4 Eggland's Best Cage Free eggs, large, plus 1 extra for brushing on top of the puff pastry
  • 1/4 cup chopped chives
  • Salt and Pepper

Method

  • Step 1

    Line a baking tray with parchment paper.

  • Step 2

    Add ¼ cup of cheese to 4 sections of the tray leaving space in between each. Create a nest in each section so the egg will stay in place.

  • Step 3

    Crack an egg into the middle of each of the cheese nests, then break the eggs to scramble them just a bit. Add some chopped chives, salt, and pepper on top of each.

  • Step 4

    Place a cut piece of puff pastry over each of the egg and cheese nests, making sure to press the pastry down onto the parchment to seal the ingredients in.

  • Step 5

    Brush the top of the puff pastry with the extra beaten egg and bake the turnovers at 425°F for 15 minutes. Enjoy!
