ingredients
- 3 cups Water
- 3 cups Veggie Broth
- 1/2 pack packet of Instant Miso-Cup soup
- 3 tablespoons tablespoons of organic tomato sauce
- 2 large long carrots sliced
- 1/4 cups finely diced yellow onion
- 3 cloves minced Garlic
- 3 peeled and cubed yellow potatoes
- 1/2 cups finely chopped green pepper
- 1 leaves Culantro
- 1 teaspoons Salt
- 2 tablespoons nutritional yeast
- 1 cups fresh Broccoli
- 2 cups Noodles
Method
Step 1
Prepare all your veggies and set aside.
Step 2
Add water, vegetable broth and instant Miso-Cup packet, to a large pot and bring to a boil.
Step 3
Immediately add of the veggies and seasonings. You are adding all the ingredients except the pasta and broccoli. Stir well and bring back to a boil. Once boiling, immediately turn to the lowest heat, cover and simmer 10-15 minutes until the carrots and potatoes are becoming tender.
Step 4
Add the pasta and bring back to a boil. Once boiling, leave the lid off and turn the heat to medium-high and cook for about 10 minutes, or until the pasta is tender, but still firm. Turn off the heat and add the broccoli.
Step 5
Feel free to taste and add any extra seasoning. Garnish with fresh cilantro, green onions and red cabbage if desired.
