ingredients

  • 1 cup uncooked sushi rice
  • 2 tablespoons rice vinegar
  • 1 package vegan shrimp
  • 1/3 cup vegan mayonnaise
  • 1/2 lime, juiced
  • 2 tablespoons sriracha
  • 1 cucumber, thinly sliced
  • 1 avocado, thinly sliced
  • 1-2 sheets nori, toasted, torn into small pieces
  • Radish, sliced, for topping
  • Pickled ginger, for topping
  • Vegan caviar, for topping

Method

  • Step 1

    Cook the sushi rice according to package directions, then immediately stir in the vinegar and let cool.

  • Step 2

    Boil the vegan shrimp. Chop about 1/2 the shrimp into small pieces; set aside.

  • Step 3

    To make the filling, mix the mayonnaise, lime juice and sriracha together in a bowl. Stir in the chopped shrimp, cucumber, avocado and nori.

  • Step 4

    Press a layer of cooled rice into silicone doughnut-shaped molds; press filling into this layer, and then press a final layer of rice on top to seal. Ensure that the filling is entirely surrounded by rice; let set in fridge, preferably overnight. Carefully remove from molds and add toppings to preference.
