Nice Cream Sandwiches

Recipe Card

  • 1 cup all purplse flour
  • 1/2 cup oat flour
  • 3/4 cup Lakanto sweetner, ( if you dont want to make it sugar free you can sub for sugar)
  • 1/3 cup melted coconut oil
  • 1/2 cup apple sauce
  • 1/4 cup coffee
  • 1 1/4 teaspoons baking powder
  • 1 teaspoons vanilla paste
  • 1/2 teaspoons salt
  • 4 tablespoons cacao powder
  • Step 1

    In a standing mixer or a bowl add melted coconut oil, vanilla paste, applesauce , coffee, lakanto sweetener and salt. Combine well

  • Step 2

    Add sifted Cacao powder, AP flour, oat flour,and baking powder.

  • Step 3

    Once a soft dough is formed, Take a long piece of plastic wrap, sprinkle lightly with flour to prevent from sticking) and place the dough, make it flat with your hands and cover with another long piece of plastic wrap, use the rolling pin to flatten it more. Transfer to a sheet pan and put it in the fridge for 1 hour.

  • Step 4

    Take it out of the fridge and roll it between the plastic wrap to make it about 1/4 of an inch. Cut it the desired shape to make the ice cream sandwich cookies. ( I used a sandwich cookie mold by wilton)

  • Step 5

    Place the cut dough in the cookie mold or tray and bake for 15 minutes at 350.Take them out of the oven and place them on a cooling rack before filling them with the ice cream.

Napolitean nice cream filling


  • 4 each frozen bananas
  • 1 each vanilla bean
  • 1 ounce starwberries
  • 1 (ounce) chocolate chips
  • 1 tablespoons cacao powder
  • 2 tablespoons almond milk

  • Step 1

    Place frozen bananas, almond milk , vanilla and blend ( I used a vitamix) Blend until ice cream consistency. Separate the mixture in 3 Add the chocolate chips to 1/3 of the mix Add the strawberries to 1/3 of the mix and add the cacao powder to the other third

  • Step 2

    Take the cookie pan and cut small pieces of parchment paper to be able to take out the ice cream after freezing it) after the parchment paper is placed in the bottom start adding layers of the different flavors and level with a spatula.

  • Step 3

    Freeze for about one hour. Take out of the mold using the spatula, remove parchment paper from the bottom and place between two cookies to make your ice cream sandwich. Garnish with chocolate chips, strawberries and edible flowers.
