  • 1 ½ teaspoons unsalted butter
  • 2 to 4 cloves freshly minced garlic
  • 1 (10 ounce) can Red Gold Tomato Love Original Diced Tomatoes + Green Chilies
  • 2 tablespoons Red Gold Roasted Garlic Tomato Paste
  • 1 tablespoon dried oregano, plus more for garnish
  • 1 cup plain cottage cheese
  • 1 cup fresh chopped spinach
  • ½ cup plus ¼ cup shredded mozzarella cheese, divided
  • ½ cup shredded provolone cheese
  • Turkey pepperoni slices, for topping
  • Fresh basil, for garnish
  • Crushed red pepper flakes, for garnish
  • Grated parmesan cheese, for garnish

Method

  • Step 1

    Preheat oven to 425°F.

  • Step 2

    Heat butter in a cast iron skillet or oven-safe pan over medium heat until melted.

  • Step 3

    Turn heat to low and stir in garlic, cooking for 2-3 minutes or until fragrant.

  • Step 4

    Add Red Gold Tomato Love Original Diced Tomatoes + Green Chilies, Red Gold Roasted Garlic Tomato Paste, and oregano. Mix and set aside.

  • Step 5

    In a bowl, mix cottage cheese, spinach, mozzarella, and provolone together and add to skillet to combine with tomato mixture. Spread evenly across the pan.

  • Step 6

    Sprinkle over with remaining ¼ cup mozzarella and top with pepperoni.

  • Step 7

    Bake for 10-12 minutes until cheese melts. Broil for 2-3 minutes until golden brown and bubbly.

  • Step 8

    Garnish with fresh basil, grated parmesan, and crushed red pepper.
