"My weekend ended with rainbows and MISO, EGGPLANT, & ROASTED GARLIC SPREAD. (I used the talented @andreabemis recipe except I roasted a whole head of garlic and added it to the dip). @thefitforkfeed used the recipe linked here but also included a whole head of roasted garlic.
To roast a head of garlic, preheat the oven to 350˚F and trim about 1/4 inch off the top of the garlic bulb, so the cloves are exposed. Lay out a square of tin foil (about twice the size of the garlic) and place the prepared bulb on top.
Drizzle with olive oil and salt and pepper and wrap the foil around the entire bulb tightly. Roast for about an hour.
When cool, squeeze cloves out of bulb and add to the eggplant miso dip before blending.
