Sweet Potato Pizza with Pesto and Chickpeas

  • 2 medium sweet potatoes, skin removed, boiled and mashed
  • 4 tablespoons almond meal
  • 1 teaspoon baking soda
  • 1 tablespoon apple cider vinegar
  • 2 teaspoons paprika
  • 1 teaspoon garlic powder
  • 2 teaspoons italian seasoning
  • 2 tablespoons olive oil
  • salt and pepper to taste
  • 1 cup cooked chickpeas
  • 1/2 cup vegan pesto
  • Cherry tomatoes, halved, for garnish


  • Step 1

    Preheat oven 350°F.

  • Step 2

    Mix all the crust ingredients together in a bowl until it forms a ball. Turn the dough out onto a lined baking sheet and using your fingers press it down until it is about 1/2 inch thick and spread out evenly.

  • Step 3

    Bake in a preheated oven for 25 - 30 minutes until the edges are lightly browned.

  • Step 4

    Then take the crust out and allowed it to cool, and then spread the pesto over top and sprinkle on the chickpeas. Return to the oven for 5 minutes to warm through.

  • Step 5

    Remove from the oven and top with cherry tomatoes. Enjoy!
