ingredients
- 1 pound ground Australian grassfed beef
- 1 pound ground pork
- 1 pound ground veal
- 2 tablespoons chopped parsley
- 1 tablespoon kosher salt
- 1 teaspoon black pepper
- 4 large eggs
- 1 cup grated pecorino romano cheese
- 2 cups breadcrumbs
- 1 cup milk
- 1 cup tomato sauce
For the coating

- 1 cup breadcrumbs
- 1 cup grated pecorino romano
- 2 cups neutral oil, for frying
Method
Step 1
Mix ground beef, ground pork, ground veal, parsley, salt, pepper, eggs, pecorino romano cheese, breadcrumbs, milk, and tomato sauce in a large bowl and mix by hand until well incorporated (mixing by hand helps prevent overmixing!) Roll into small balls (about 2 teaspoons).
Step 2
Place remaining breadcrumbs and pecorino romano cheese in a large, shallow dish and stir to combine. Drop meatballs into breadcrumb mixture, turning to coat evenly.
Step 3
Heat oil to 350F degrees in a large, deep saute pan. Working in batches, fry meatballs until browned and cooked through, about 2 minutes. Transfer to a paper towel-lined baking sheet using a slotted spoon. Store cooked meatballs in a 250F degree oven to keep warm until ready to serve.
