For the Nutella Filling:

ingredients

  • 2 cups Nutella
  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon kosher salt
  • 1 1/4 cups unsalted butter, at room temperature
  • 1 1/4 cups dark brown sugar, firmly packed
  • 3/4 cup granulated sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups 60% dark chocolate, chopped
  • 1/2 cup walnuts, toasted and chopped
  • 3 tablespoons Nutella, for drizzling

To make the filling:

Method

  • Step 1

On a large piece of parchment paper placed on a baking sheet, draw a 10” inch circle.

  • Step 2

Place Nutella into a piping bag with a medium to large tip. Pipe Nutella inside the circle, about ½ inch from the marking. Place Nutella disk in freezer for 20 minutes.

To make the cookie:

  • Step 1

Preheat oven to 350F degrees. Line a 10-inch cast iron skillet with parchment and non-stick spray.

  • Step 2

Whisk flour, salt, baking powder and baking soda in a large bowl. Set aside.

  • Step 3

Combine butter, brown sugar and granulated sugar in the bowl of a stand mixer fitted with the paddle attachment. Beat on medium speed until light and fluffy, about 5 minutes. Add eggs, one at a time, scraping down the bowl after each addition. Add vanilla extract and mix again to combine.

  • Step 4

On low speed, slowly add flour mixture to mixer. Toss in chocolate and nuts and mix just until combined.

  • Step 5

Divide dough into two halves. Transfer one half to skillet and pat down evenly to the edge of the pan.

  • Step 6

Remove Nutella disk from freezer, carefully peel away from the parchment. Quickly place disk on top of dough.

  • Step 7

Transfer other half of dough over top of Nutella and pat evenly to the edges. Nutella should be completely covered.

  • Step 8

Bake for 45 minutes. Edges should be golden brown and center will be puffed.

  • Step 9

Remove from oven and let cool for 20 minutes before drizzling with Nutella. Serve warm.
