Start the week off well with a huge pot roast for leftovers. Prep it on Sunday and all you have to do come Monday is reheat.  On Tuesday,  green vegetable-packed brown rice with creamy, coconutty Cajun seasoned prawns. On Wednesday, lighten up with a roasted cauliflower salad. End your work week with a delicious southern Indian egg curry, paired with your favorite rice—you might want to cook it again the next day for breakfast! This wonderful tahini iced latte will get you in the mood for the weekend.
