- 1 cup coconut yogurt
- 2 very ripe bananas
- 1/ 2 teaspoon vanilla paste, or vanilla extract
- 1 teaspoon maple syrup
- 5 tablespoons chia seeds
- 1/ 2 cup coconut milk
- Coconut chips, or shredded coconut, for topping
Mash one banana, save the other one for topping. Stir all ingredients together in a bowl until there are no lumps. Let sit for 5 minutes and stir again. Cover and refrigerate over night.
Serve in 2 glasses and top with the reserved sliced banana and coconut chips. To achieve the layered effect like the photo, simply mix in a little more coconut yoghurt for every layer.
