Fritters:

  • 1 large sweet potato, peeled and grated
  • 2 tablespoons green onions, finely chopped
  • 2 tablespoons red bell pepper, finely chopped
  • 1/2 cup grated parmesan cheese
  • 2 large eggs, whisked
  • 1 teaspoon maple syrup
  • 1/4 cup gluten-free flour
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon thyme
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • Olive oil, for frying
  • Fresh parsley, chopped for garnish

Dipping Sauce:

  • 1/2 cup plain Greek yogurt
  • 1/4 cup mayonnaise
  • 2 tablespoons sriracha
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper

Method

  • Step 1

    Peel and grate the sweet potatoes onto a cutting board. To ensure crispy fritters, squeeze as much water/moisture out as possible. You can also pat them dry with paper towels.

  • Step 2

    In a large bowl, combine the grated sweet potato, green onions, red bell pepper, Parmesan cheese, whisked eggs, maple syrup, gluten-free flour, garlic powder, thyme, salt, and pepper. Mix until well combined.

  • Step 3

    Heat a thin layer of olive oil in a large skillet over low-medium heat.

  • Step 4

    Using a spoon, add dollops of the sweet potato mixture to the skillet and press into a pancake/fritter shape.

  • Step 5

    Cook in the skillet over medium heat for 3-4 minutes per side or until they are golden brown on the outside and cooked through inside.

  • Step 6

    While the fritters are cooking, prepare the dipping sauce by combining Greek yogurt, mayonnaise, sriracha, garlic powder, salt, and pepper in a bowl. Mix well.

  • Step 7

    Serve the sweet potato fritters on a platter with a dollop of the prepared dipping sauce. Garnish with fresh parsley.
