Ever wondered what to do with your pineapple rind and core? This sounds like the perfect way to get nourishment out of them!
Tepache! A fermented pineapple drink from México. Usually made using a few cups of sugar, I only used a little maple syrup. Day two & it's looking good! I think I'm going to let it get fizzy before bottling it up. My grandma used to make this for my mom in Cuba & it was what she knew as soda! #tepache #fermented #pineapple -@thecastawaykitchen


1 6 pint jar
1 pineapple rind
Filtered water, to cover 
1 cinnamon stick
1/2 cup maple syrup

Combine ingredients in a clean glass jar or pitcher. Cover loosely with cheese cloth or plastic wrap and place in a warm place to ferment.
