“Kadhi Pakora” to the rescue 😂
Jokes apart its a dish of fried fritters (pakora) dunked in a simple yet delicious Yoghurt + Chickpea flour or Besan sauce perfect for #summer
Every household in 🇮🇳 from north to south east to west makes it- but differently. Since I come from such a diverse family- my home recipe is a mix of Maharashtrian, Punjabi, Gujrati, Sindhi flavours.

.Method: In a large bowl combine 300 gms around 1 1/2 cup yoghurt + 4-5 tbsp of besan. Add 1 sliced onion + minced garlic + minced ginger 1 tbsp + 1/2 tsp each chilli powder + cumin powder + coriander powder + turmeric + salt + 1 tsp sugar +enough water to make a thin batter. Keep aside.
Heat oil in pan. Add 1/4 tsp methi seeds + cumin seeds, curry leaves + 1-2 dried red chilli. Pour in the liquid mixture. Cook on simmer for 30-40 mins. Keep stirring- gravy will get thicker #slowfood .
For Pakora: 1 cup chopped methi leaves (u can use spinach or any veggie of your choice) + 1 finely chopped onion + ginger garlic paste + choice of seasoning + enough besan to coat (fritter batter). Deep fry or shallow fry the fritters. Remove on absorbent tissue paper. Keep aside.

Just before eating: pour the kadhi in a serving bowl. Dunk the fried fritters. .
Final tadka: heat a little oil - add few methi seeds 1/2 -1 tsp of coriander seeds and 1/2 tsp of chilli powder. Pour the tadka immediately on the kadhi. Garnish with fresh coriander leaves. Enjoy with steamed rice or just on its own 🤤 Tastes even better the next day😁
