Irani tea is a #Persian influenced tea one of the many delicious secret recipes brought in by the #Zoroastrian Irani Immigrants to the then #BritishIndia 🇮🇳 .
Bombay/ Mumbai has a lot of legendary Irani Cafes which serve finger licking good food some of the cafes are as old as 100 years or more. .
I had a lot of Gujju and Parsi friends in school all who lived in Andheri Parsi Colony. Also, my dad always took us to the famous @britannia_co one of the families favourite restaurant beside many other such cafes.

The secret to Iranian tea is the reduced milk and dum cooking technique but many don’t know the real secret is addition of “egg whites” (yes you heard it right)- If it is to be believed that’s what gives it its distinct taste. I laugh and say this on purpose to all my pure “vegetarian friends & family” who sip so many cups in a day🤣🤪 I was told about this secret by one of my friends mother in school whose family owned a Iranian Cafe.

While each Irani Cafe have their own secret recipe -here is my simple version of this tea which can be easily made at home (no egg/condensed milk/mawa). Some people add spices to the tea but originally Parsi’s don't add any. Since the weather outside is weird- rainy and cold in 🇭🇰 I have just added fresh ginger and cardamom- you can skip it if you want. Some also add condensed milk / mawa for a more richer taste- I don’t - if you reduce the milk well it gives the same taste. Swipe for recipe💁🏽♀️
