ingredients
- 1 1/4 cups All purpose flour
- 1 large Egg
- 8 tablespoons Unsalted butter
- 1/2 cups Light brown sugar
- 1 1/4 cups Old fashioned oats
- 3/4 cups Raisins
- 1/2 cups Dark chocolate chips
- 1/2 cups Almonds
- 1/2 teaspoons Baking powder
- 1/2 teaspoons Baking soda
- 1/2 teaspoons Sea salt
- 1 teaspoons Vanilla extract
Method
Step 1
Preheat oven at 325F/160°c. Set oven rack on medium, roast Almond for 7 minutes & chop them coarsely. Set aside.
Step 2
One hour before baking, set butter & egg on the counter at room temperature. In a bowl, whisk together flour, salt, baking powder, baking soda. In a another bowl, toss almonds, chocolate chips, raisins & oats.
Step 3
In a bowl , whisk egg & vanilla together & cover it with plastic wrap. In a bowl of a stand mixer with paddle attachment or by hand whisk or beat the sugar & butter on medium speed for until smooth & creamy, about 1 minute. Scrape down the side of the bowl.
Step 4
With a mixer speed, add egg mixture & beat for 30 seconds, or until just incorporated. Add the flour mixture in two batches, beat on low speed just until incoperated & flour disappear. Add nut mixture in two batches & beat on low speed just until incoperated.
Step 5
Scrape the dough down in a bowl and wrap it tightly & refrigerate for minimum 30 minutes or up to 24 hours. Meanwhile preheat oven at least 30 minutes before baking, set oven rack at the middle level. Set the oven at 375F/190°C.
Step 6
Scoop out 2 tablespoons or 41g each cookie dough. Roll each piece between palm of your hand & place them on cookie sheet, minimum of 2 inch apart.
Step 7
Bake cookies for 6 minutes. For even baking bake rotate halfway through & continue baking for another 6 minutes or until light brown.
Step 8
Lift the cookies and place them on cooling rack. Cool them completely & enjoy.
