"Pepper and Tofu Jalfrezi . Weekend is incomplete without curry. This vegan curry is very easy to make and packed with tons of flavours. It's healthy & delicious ❤️

Ingredients
Tofu/Paneer diced : 250g
Onion sliced - 1large
Tomato puree - 100g
Tomato paste - 2tbsp
Ginger&garlic paste - 1tsp
Red Chilli powder - 1/2tsp
Turmeric - 1/2tsp
Corriander powder - 1tsp
Garam masala - 1/2
Cumin powder - 1/2tsp
Cumin seeds - 1tsp
Red & green peppers sliced - 1/2each
Handful of fresh cilantro
Oil - 2tbsp
Salt - 1tsp
Method
Heat the large pan on medium heat, add cumin, then add sliced onion and sautee till transparent. Now add ginger & garlic paste, fry until raw smell goes away.
Now add tomato puree, tomato paste and cook for 2-3 minutes, now add turmeric, red chilli, cumin, salt & corriander powder. Cook on low heat for 5-6 minutes.
Now add peppers and mix it well. Cook for another 2-3 minutes. Now add tofu/paneer & garam masala. Cover the pan and cook for 3 minutes on low heat. Add chopped cilantro and serve hot with basmati rice or Chappati & enjoy."
