"Flatbread stuffed with Spicy Paneer. It's Delicious. What's the best part is, it's made with whole wheat flour & filled with peppers, herbs and very easy to make and very nutritious aswell. You simply can't go wrong with this stuffed flatbread. Ingredients Paneer - 250g Onion finely chopped - 1small Garlic clove minced - 1-2 Red & green peppers - half each Paprika - 1tsp Garam masala - 1/2tsp Chaat Masala - 1tsp Cumin powder - 1/2tsp Dry mango powder (optional) - 1/2tsp Cilantro - 1tbsp Mint - 1tbsp Salt - 1/2tsp Oil- 1tbsp For whole wheat dough Bobs red mill whole wheat flour - 2cups Water - 2/3cup or as required Oil- 1tsp Salt - 1/2tsp Oil/clarified butter for roasting flatbread Method : In a large bowl add flour, salt & oil, mix it well. Now start adding water 1/4 cup at a time keep mixing until you form a dough. Now knead the dough for 5 mins or until smooth. Cover the dough and rest for 20-25 minutes. Meanwhile heat skillet on medium heat. Add oil and minced garlic, sautee for few seconds. Now add finely chopping onion and sautee for 1-2 minutes. Meanwhile finely chop peppers remove seeds and add peppers to skillet, add salt to taste. Cook for another 2-3 & turn off the heat. Keep aside. Let it cool to room temperature. In large bowl add grated paneer, now add paprika, garam masala, chaat masala, cumin powder, dry mango powder & salt. Now add stir fried onion & pepper, finely chopped cilantro & mint. Mix it well and keep aside. Now divide dough in equal tennis size balls. Dust some flour on surface and with help of rolling pin, roll the balls in a circle. Place the paneer stuffing on half side of the rolled dough and flip it over another half to form a semi circle. Press the edges gently to seal the dough. Heat skillet on medium low heat. Gently lift the stuffed bread and place it on skillet. Now add 1/2tsp oil on top of the bread and flip it and let it cook for a minute & add oil on top of other side of the bread. Flip it and cook for another minute until nice golden and you see brown spotting on them. Place them in a plate and serve it with yogurt & enjoy."
