"White Chocolate Marscopone cheese Whoopie Pie. Although it's call a "Pie" but actually it's a smooth silky cheese frosting sandwich between light & moist cake 😍. Ingredients : Egg - 1large Unsalted butter - 28g Dark chocolate melted - 42g All purpose flour - 125g Dutch processed cocoa powder - 19g Baking powder - 1/2tsp Baking soda - 1/2tsp Low-fat buttermilk - 121g Sunflower oil - 27g Dark brown sugar - 120g Fine sea salt - 1/2tsp Cream cheese filling : Marscopone - 400g Creme Fraiche - 25g White chocolate - 300g Vanilla extract - 1/2tsp Unsalted butter - 112g Method : One hour ahead, set butter & egg on the counter at room temperature Melt white & darkchocolate separately in microwave proof bowl, microwave for every 15 sec, stirring with rubber spatula until completely melted, cool to room temperature. Meanwhile prepare cheese filling. In a food processor add cheese, creme fraiche, butter & process it for few seconds until smooth & creamy. Add melted white chocolate pulse it until smooth & creamy. Add vanilla pulse it in. Keep it in a bowl & refrigerate for 2 hour. Preheat the oven at 400F/200°C,set oven at medium rack level. In a medium bowl whisk together flour, cocoa, baking powder, baking soda & salt & sift the mixture. In a bowl with a stand mixer fitted with flat beater, beat butter, sugar, egg & oil on medium speed for 5 minutes. Scrape down the side as needed until it's smooth & pale. Add cooled melted chocolate & beat on low speed until incoperated. Add one third flour & one third buttercream & beat on low speed just until incoperated. Scrape down side & repeat with another third of the flour mixture & buttermilk & final third. Raise the speed to medium, beat for 15 seconds or until smooth. Measure the batter in 2inch cookie scoop, placed the batter on cookie sheet. They should be 2inch apart. Bake for 6 minutes, for even baking rotate halfway around. Continue to bake for another 3-4 minutes. Cool the whoopie on cooling rack for 5 to 8 min. Using thin pancake Spatula, lift the cookie from the pan and keep them on wire rack. Cool completely. Place cream cheese filling between two whoopie, press down slightly & enjoy."
