"Hungry for the most delicious dessert ever 😍? Here is my version of Baklava filled with creamy ricotta custard with a hint of orange blossom water instead of traditional nuts. Crunchy from top and bottom become chewy & moist. So good one cannot resist trying it. Ingredients: Filo sheets : 12 ( cut them into half ) Clarified butter or butter melted : 80g Milk : 80g Heavy cream : 116g Sugar : 1tbsp Cornstarch : 1tbsp Ricotta cheese : 454g Orange blossom water : 2tsp For fragrant syrup Sugar: 500g Water: 300ml Golden syrup : 10g Freshly squeezed lemon juice : 1/2tsp Orange blossom water : 1tsp Method : In a medium saucepan, Stir together all of the syrup ingredients except orange blossom water. Cook over medium heat, stirring constantly , until mixture comes to a boil. Stop stirring, reduce the heat & boil the mixture for 5 minutes. Pour the syrup in a bowl & refrigerate.when syrup is cool add orange blossom water. In a medium saucepan, stir together the milk,cream,sugar,cornstarch until mixed well . Over medium heat,stirring constantly , bring mixture to boil.reduce the heat to low & boil , stirring for 2 min. Remove the pan , cover the mixture & cool it completely.When mixture is cool, stir in ricotta & orange blossom water until well blended. Preheat the oven to 390f/200C at least 15 min before baking. In a baking pan, brush the interior with melted butter, To assemble filo i typically cut my filo in half & fits perfectly . Brush the top of the filo with butter .Repeat this process until you have applied 12 layers of fio, now distribute cheese mixture on top very well and continue assembling the rest of baklava same again as above . Cut the pastry into desired shape & Bake  for 40 - 45 min or until light golden. As soon as you remove the pastry from the oven, pour sugar syrup evenly , let it cool & serve."
