"Sharing one of the most popular snacks from Turkey, Pide ❤️. Beautiful combination of flavours 😍 Ingredients : For the dough: White bread flour : 300g Olive oil : 1tbsp Dried yeast : 3g Salt : 1tsp Lukewarm water : 160 g Sugar : 1tbsp For topping: Ground mutton : 400g Sivri green & red pepper or green & red bell pepper : 1 green & 1 red Onion : 1 medium Tomato : 1 medium Tomato paste : 1tbsp Parsley :2  tbsp Garlic clove finely chopped : 1 Freshly grounded black pepper : 1tsp Paprika powder : 1tsp cumin powder : 1tsp Salt to taste Olive oil : 1 tbsp 1 egg to brush Method : Stir in dry yeast , sugar and little warm water to activate yeast .Set aside the mixture to get frothy for 5 minute In a stand mixer or by hand in a bowl add sifted flour & salt , add oil , on a low speed start mixing flour add water little by little to form a dough,once dough is formed keep kneading for 10 minute until it's nice and smooth. place dough in a large bowl cover it with cling film & let it rest until it's double in size In the meantime prepare your filling. heat oil in a heavy bottom pan add finely chopped garlic let it saute for 20-25 sec then add ground meat, cumin powder, paprika, black pepper & cook for another 5 min. In the meantime in a food processor add onion,peppers and parsley and pulse it a few times to finely chopped vegetables. In a meat mixture add finely chopped tomato and tomato paste, cook for another 5 min then add chopped vegetables, salt & herbs cook mix for 2 min and turn off the heat, let it cool to room temperature . for cheese pide mix mozzarella and feta cheese in another bowl. When dough doubles in size form 3 large balls or small 6 six balls and let it rest for 1 hour. Preheat oven to 180C/350 f On a floured surface take a dough ball and try to roll the dough in a oval shape once it is in a oval shape, in a baking tray with baking paper  place oval shaped dough add your toppings cheese or meat vegetable one, fold the side to act as a border to keep filing intact. In the last pinch squeeze oval dough at each end to make it pointy. Beat egg in a bowl and brush the edges with egg mixture. Bake for 20 min until golden brown & serve."
