"Quick & easy to make old fashioned Buttermilk Chocolate & Pistachio Doughnuts. Compared to traditional yeast based doughnuts this one is much easier to make. Ingredients: Dough All purpose flour - 300g Cake flour - 200g Cocoa powder - 4 tsp Baking powder - 1 tbsp Eggs - 2 large Buttermilk - 165 ml Butter - 80g Sugar - 125g Salt - 1 tsp Vanilla extract - 1 tsp Oil for frying Chocolate Glaze Confectionary sugar : 320g Golden /corn syrup : 1 1/2 tsp Semisweet chocolate melted : 115g Milk : 1 tbsp Vanilla extract : 1tsp Salt : 1/4 tsp Pistachio for garnish Method Sift all purpose flour, cake flour, cocoa powder & salt in a bowl & keep aside. In a stand mixer with a paddle attachment (or by hand whisk) add sugar & butter mix till it became pale in colour. Add buttermilk, egg, vanilla extract and mix for another 1 min, add flour to the wet mixture in three separate additions mix for another minute. Transfer dough to clean bowl cover it and refrigerate for 2 hour or upto (24 hour). Meanwhile prepare chocolate glaze. Place sifted sugar, golden syrup, salt, vanilla & milk mix until the mixture is nice & smooth. Add Melted chocolate & stir to combine completely. If icing too thick add milk one tsp at a time. Keep aside on a room temperature. Heat oil to 325f/177°C, take out chilled dough to a floured counter & roll out 1/2 in 12mm thick. Flouring the top of the dough and by the help of rolling pin flatten the dough. Cut as many doughnut & hole possible, shake excess flour. Carefully add to the oil & fry for 1 minute & 15 sec each side & transfer to the rack set over paper towel. Fry all the doughnut when they are slightly warm dip them in chocolate glaze, sprinkle crushed Pistachio & let the chocolate set & enjoy."
