"Chicken fajita Quesadilla with salsa, melting cheese between crispy tortilla, ultimate blend of flavours 😍. Ingredients:
Tortilla: - All purpose flour - 1cup
- water - 1/2 cup
-salt - 1tsp
- baking powder - 1tsp
- Vegetable oil - 1 tbsp
For Chicken fajita: - Chicken - 450 grams
- onion - 1 sliced
- peppers( green & red) - 1 sliced
- paprika - 1tsp
-black pepper - 1/2 tsp
- oregano - 1/2tsp
- garlic powder - 1tsp
- cumin powder - 1/2tsp
- salt - 1tsp
- lime juice - 2tsp
- Oil - 2tbsp
Cheese:
Sharp cheddar - 100 grm
Gruyere cheese - 100 grm
Method : - First make tortilla dough, In a bowl add all the dry ingredients mix well thn add oil and water little at a time and knead a soft dough, let it rest the dough for 20-25 min. -After rest knead the dough again to make it smooth dough, take a griddle and turn on medium flame when its hot roll out thin tortilla and cook it on griddle 15 sec each side or until you see brown spots. Take them out from gridlle and keep them in cloth to keep them warm & soft. - Marinate chicken with all the spices mentioned above . Let it marinate for half and hour. -
add oil to the skillet saute chicken until its brown and cooked when once chicken done add peppers and onion and grill it for about 5 min turn off the heat and keep them in bowl.
Lay tortilla on low heat skillet add 1/3 cup of cheese and spread all over tortilla add 1/2 cup of chicken mixture on half tortilla and fold the cheese part of tortilla over chicken mixture and press it with Spatula and let it cooked from both side until cheese is melted for about 1 min each on low flame.
Serve it warm with salsa & sour cream."
