This loaf is a great way to give banana bread a little flair. Below is a link to the original recipe written in French.


3 large ripe bananas, mashed + 1 sliced banana

1/2 cup corn starch

1 cup whole-wheat flour (you can use all-purpose flour instead)

1/3 cup unrefined cane sugar (e.g. dark or light Muscovado sugar)

3/4 cup unsweetened almond milk

2 tsp baking powder

1 tsp vanilla extract

2 tbsp coconut oil (melted)

1 cup blueberries

½ cup vegan white chocolate chips


Preheat oven to 350°F and grease 9 x5 inch loaf pan.

In a bowl, mash the bananas with a fork until smooth.

Add the wet ingredients (almond milk, vanilla, and melted coconut oil) until fully combined.

In a separate large bowl, combine the dry ingredients : corn starch, flour, cane sugar and baking powder.

Combine gradually wet and dry ingredients and mix well.

Add blueberries and vegan chocolate chips (save some to sprinkle on top).

Pour the batter into the greased loaf pan. Sprinkle chocolate chips and blueberries on top and add banana slices lengthwise.

Bake in preheated oven 50-55 minutes. A toothpick inserted into the center should come out clean.

Let it cool for about 10 minutes and enjoy!

Note: You can keep it refrigerated for about a week.
