Spicy Tuna Rice Burgers

Make about 3 burgers
For burgers:
2 cups of short grain rice
1 tsp sesame oil
Spicy tuna
1 hass avocado
1 jalapeno
Unagi sauce
Sriracha mayo
Optional toppings: Masago, Korean yellow pickled radish, furikake
For spicy tuna:
12 oz sashimi grade tuna
1 stalk of scallion, finely chopped
1.5-2 tsp shichimi toragashi (Japanese mixed chili pepper)
2 tsp sesame oil
2 tbsp sriracha
Directions:
Prepare 2 cups of short grain rice according to your rice cooker's instruction.
Chop tuna into small chunks and mix with remaining ingredients. Keep covered in the fridge until ready to use.
Shape cooked rice into 6 patties. I use a wide plastic mason jar cap for the mold, slightly oil the cap first to prevent sticking.
Brush patties with unagi sauce. Oil your cast iron skillet with a tsp of sesame oil and grill the rice patties until crispy on both sides.
Peel and cut avocado and jalapeno into thin slices. Layer grilled rice buns with avocado, spicy tuna, masago, jalapeno, julienned Korean yellow pickled radish. Drizzle with unagi sauce and/or sriracha mayo. Sprinkle on nori and furikake.
