Baked Tater Tots With Cheese, Bacon & Eggs

Ingredients:

1 lb frozen tater tots
3 slices bacon, chopped
3 eggs
1/2 cup shredded cheddar cheese
1/2 cup Monterey Jack cheese
1 tbsp chopped chives
Salt and pepper to taste

Directions:

Preheat the oven to 400F.

In a cast iron pan, cook chopped bacon until lightly browned.

Transfer bacon to a plate and discard some of the fat except for 1 tbsp.

Add tater tots to the pan and toss to coat in bacon fat.

Bake for 15 mins or until tots are brown and crispy.

Remove pan from the oven and lower the heat to 375F.

Make three nests in the pan, crack in eggs, top with bacon and cheese.

Return pan to the oven and bake for another 10-12 mins or until the egg whites are just set.

Sprinkle with chopped chives, salt and pepper to taste.
